The commune of Castex, in the heart of the Arize valley, is proud to give its name to a unique fig variety: the Castex Fig
The Castex fig is an exceptional Mediterranean fig, registered with the Conservatoire des plantes méditerranéennes de Porquerolles.
It can be recognized by its thin, pale yellow skin with violet highlights and its light pink, delicate, flavorful flesh. This quality fruit is used to make artisanal products such as Castex fig paste, jelly and chutney, ideal with foie gras, cheese or cold meats. These specialties are on sale at the Arize-Lèze Tourist Office in Le Mas d'Azil.
Castex fig tree seedlings are available at Les Martres.
Every year, on the first weekend in October, the Fig Festival in Mas d'Azil celebrates this emblematic product of the Arize valley in Ariège.
