In jam, jelly or chutney, the fig is the star of the store. Every first weekend in October, we celebrate the Fig Festival in Mas d’Azil. And all year round, you can enjoy figs candied and cooked in a cauldron. Jellies and chutneys are made with the figue blanche de Castex, a small village in the Arize valley where hardy locals are busy transforming this fruit for everyone to enjoy. Don’t hesitate to try them fresh in early autumn: they’re delicious and a perfect accompaniment to duck, foie gras… The winning combo: a fresh goat’s cheese salad with ripe figs, honey, a dash of pepper and cider vinegar. We’re already salivating!
